Day 15

Starlight Distillery
Carl T. Huber's Bloody Butcher

Style: Single Barrel of Indiana Straight Bourbon

Mashbills: Undisclosed bourbon from bloody butcher corn

Aged: 6.5 Years

Proof: 106

Cost: $59.99

Why I chose it: Starlight is an Indiana distillery, orchard, winery, farmer's market, restaurant, and more. They do a lot of unique finishes and experimentation from their farm to create unique finishes on their younger, maturing product. We are starting to see 6+ year products regularly and I thought this offering was both too unique to pass up and too risky to buy a full bottle of. Their "blood moon batch" is made from bloody butcher corn, an heirloom grain from Europe. The white corn variety is filled with tiny flecks of dark red mixed in, resembling the blood splatters on a butcher's white apron - they don't get that graphic on the labels! I designed the calendar for us to try the blood moon batch on this day, December's only full moon. #cheers
